Traditonal Coating Method

Flour your item.  (Rice Flour for Gluen Free)

Dip in beaten egg.

Coat both sides with mix lightly pressing with finger tips. 

Sauté until light golden brown.

Alternative Coating Method

Skip the Flour Step.

Dip in beaten egg or Brush with Olive Oil.

Coat both sides with mix lightly pressing with finger tips. 

Sauté or Bake until light golden brown.

Note:  The coating will flake off easier when not using the flour, so be gentle when handling the pieces.

Eggplant Parmesan

This is our Eggplant made into a Parmesan. Great dish for entertertaining. Preparation can all be done ahead, just pop it in the oven when the guests arrive and serve it when it is nice and hot.
